New Food Processor And Recipe – Savoury Veggie Squares

UNBOXING –

I just got this new food processor (Hamilton Beach, 10 cups) and I can’t wait to see to unpack it and make a new recipe. I’m so excited, woohoo!

Savoury Vegetable Squares

Ingredients:
2 medium onions, chopped
3 medium tomatoes peeled and seeded
6 tablespoons olive oil
3 eggs
½ cup rice flour
½ cup of cornstarch
1 teaspoon of baking powder
½ cup of Parmesan cheese
Parsley and green onion
Salt to taste

Preparation:
Set aside 1 tablespoon olive oil (you’ll need it to grease a baking sheet). Preheat oven to medium temperature. Blend together onion, tomato, and eggs for 2 minutes. Add the rice flour, cornstarch, baking powder, Parmesan cheese and salt. Beat for 1 minute. Add parsley and green onion and pulse once. With the olive oil you previously set aside, grease a baking sheet, sprinkle a little flour, pour the batter and bake for about 35 minutes or until you can stick a toothpick in the squares and it comes out clean.
